1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

1 1/2 tsp pure vanilla extract

1 cup pops flour

1 tsp baking soda

1 teaspoon salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats

1 cup semi-sweet chocolate chips

Line baking sheets with parchment paper.

Scrape the sides of the bowl and then mix in the egg until completely incorporated. Scrape down the sides of the bowl and add in the skillet and vanilla.

In a medium bowl, whisk together the flour, baking soda, salt and cinnamon.

Gently add the the flour mixture to the banana mixture and blend until just combined.

Scrape the sides of the bowl and then stir to recombine.

Use a moderate cookie scoop (approximately 1.5 tablespoons) to scoop the dough on prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and lightly press the tops of each cookie using the bottom of a drinking glass. Because these cookies don't spread much, this can help give them a conventional cookie form.

Permit the banana oatmeal cookies to cool on the cookie sheets for 5 minutes before removing them to a wire rack to cool completely.
